Composition

We conduct analyses through independent laboratories of the composition of our fish throughout the year. An analysis of the flesh of Kefalonia Fisheries fish shows an average composition of 19 to 21% protein, 1.5 to 4.5% fat with 78% of the lipids in the form of unsaturated fatty acids, which are both more beneficial and easily digestible by the human organism.
